- Soak the Dates:Place pitted dates in a bowl and cover with hot water. Let soak 20–30 minutes until soft. Drain (save the soaking water).
- Blend Until Smooth:Add soaked dates and 2 cups of the saved water to a blender. Blend until creamy and thick.
- Simmer Gently:Pour mixture into a saucepan. Bring to a gentle simmer and cook 15–20 minutes, stirring often, until slightly thickened and darker in color.
- Strain for Smoothness:Pour through a fine-mesh strainer or cheesecloth. Press to extract syrup.
- Finish & Store:Stir in lemon juice or a pinch of salt. Let cool, then store in a glass jar in the fridge up to 3–4 weeks.
